"I want the Top of Waikiki to continue to evolve, excel and gain the respect of the top restaurants in the islands. I wish to cultivate the talents of the chefs and cooks on my team and have their talents be reflected in our menu.
Ultimately, I want the Top of Waikiki to stand apart from other restaurants in every area. We have unique, diverse food with global appeal. We have tasteful décor with a comfortable ambience and fantastic views everywhere you look. And we have engaging, thoughtful service with lots of aloha."

"I would love to cook for my grandfather and father if I had the chance. These are two of the most influential people who helped shape who I am. For me, cooking for my friends and family is the ultimate expression of my friendship, appreciation and love. It is the type of connection I seek with my customers."

On becoming a new father:
"It is amazing...my best work! 'Our' best work. I shouldn’t forget that my wife did most of the work. He (my son Jazz) is growing so fast. He is constantly changing and developing…I am just trying to keep up and savor every moment."
